Egg Cups

I made something this morning that my girls LOVE and I love even more because they require minimal effort, time, and ingredients.....that should be my motto in life! Ya'll may not know this about me but, I am not a great cook. I mean, I manage because well my kids have this thing about needing to be fed, but I don't like cooking and really it's just not my thang. I'm a baker. I love a good cake, cupcakes, pies, casseroles.....If I can toss it in my oven, I pretty much like it.

Today's lunch was inspired by that thought, ovens are my friend!

Egg Cups
12 eggs
1 cupish Cheese (cup...ish...b/c I didn't measure)

Fthe rest of the ingredients it's up to you!
You can throw in some scrambled sausage (about 1/2lb works great but add more if you really want it meatie....that's a word in my house)
Bacon, Diced ham, Onions,Green peppers,         Kale, Broccoli, Tomatoes, Mushrooms, Asparagus, Fresh, Basil, Olives, Sun dried tomatoes
You can even use smooshed tater tots in the bottom! *see note at end*
I mean seriously the options are endless so I am just gonna stop now....

Lets' make em'.....

Preheat the oven to 350...hello oven, my friend.
Spray a regular muffin tin with non-stick spray.

I started with my sausage, just scramble over medium high heat until browned, then drain and set aside.

While the sausage was cooking I tossed 12 eggs into a bowl and scrambled them (I also used a little milk because I like the fluff and taste better).


Then I chopped up my spinach into small enough pieces that my kids couldn't pick it out, that should be an official measurement in the cooking world!

I threw the spinach and sausage into the eggs and mixed it good, mixed it real good. Sometimes my words turn into songs, in my head, and out loud.

I used a 1/3 measuring cup as my scoop and literally just scoop the egg mixture into the muffin tins one at a time. For some reason I only ended up with 11, I hadn't had coffee yet is my only guess. (my muffin tins have been used more times than I can count, hence the dark tops)


Now, I like to add the cheese once I have the egg mixture already in their muffin tin homes BUT you can add it when you mix the other ingredients in if you want. You can't mess this recipe up, trust me! So anyway, I add a little cheese to each egg muffin tin....maybe a tablespoon or so......get the cheese all nestled in then put the muffin tin in the oven. Cook at 350 for about 20-25 minutes. Mine cook for 20 minutes and are perfect :)


So now you have the base recipe of eggs and well eggs and you can do whatever you want from there! Add all your favorites! We use these for breakfast and lunch! 

*if you want to use a tater tot bottom....grab 2 tater tots per muffin tin and smoosh them into the bottom of each....pop them in the oven to precook for about 7 minutes....now add your egg mixture right on top and cook for normal 20-25 minutes*
